Turkey, Hummus Veggie Wrap with Broccoli Cheddar Soup

Tuesday Night Dinner- Jan 8th

Turkey Hummus, Veggie Wrap


Whole wheat tortillas
Boars Head Turkey
Boars Head Cheese of your choice
1 Cucumber
1 Avocado, cut in slices
1 Tomato, chopped
1/8 Red Pepper, chopped
Lemon Juice
Dash of local oil and vinegar (ab 2 or 3 Tbsp)


Lay out tortillas and spread hummus on each, add turkey and cheese. Cut and chop the veggies and divide evenly to each wrap. Squeeze some fresh lemon juice on each.

 Roll each tortilla and cut in half


Broccoli White Cheddar Soup


3 Tbsp Olive Oil
1/2 Yellow Onion
2 Cloves Garlic, minced
Salt and Pepper
2 Tbsp Flour
2 1/2 Cups Chicken Broth
3/4 C Milk
1 1/2 Cups Broccoli Florets
2 C Sharp White Cheddar, shedded


In a saucepan heat oil and add onion, garlic, salt and pepper. Cook until Onion is translucent.

 Add flour to pan and stir for 1 minute.

Add stock, a little at a time until there are no clumps. When the stock is even, add milk and stir. Bring to a simmer

 Add broccoli and cheese and simmer for 15 minutes

Using an immersion blender, blend the soup until the mixture is creamy and smooth

Return soup to heat and cook another 5 minutes.
