Fried Chicken, Saffron Rice, Cauliflower

For the Cauliflower, all you need is a head and olive oil and salt. Cut cauliflower into pieces. Get sauté pan hot with olive oil. Put in cauliflower and salt. Cook until browned and softened

Boneless Fried Chicken with Rice and Cauliflower


Vegetable Oil
Boneless Chicken Breasts (1 per person), cubed
Flour (enough to coat each piece of chicken)
Adobo, salt, pepper, parsley
Saffron Rice (I buy mine in the rice isle)


Cut chicken into cubes and season with salt, pepper and adobo. Coat in flower.

Get heated fryer ready and few by few put chicken in fryer until golden brown. This takes about 15-20 minutes, so be patient

 Cook rice according to directions
