New Dresser!

We need a mini bedroom makeover this week. 

We bought a new dresser from Etsy- 

I got some new photos to frame, 

ANNNND 

a cool vintage fan.

Extra Creamy Mac and Cheese

--------------INGREDIENTS-----------------


Pasta ( 1 box, any kind you prefer)
2 Tbsp Butter
1 Small Onion, diced
2 Garlic Cloves, minced
2 Tbsp Flour
3-4 C Skim Cream
1 C Whole Milk
2 C Shredded Sharp Yellow Cheddar
2 C Shredded Sharp White Cheddar
2 C Shredded Monterey Cheese
1/2 C Parm
Salt and Pepper


---------PREPARATION--------



Boil salted water and cook shells.

Sauté onion and garlic in butter until translucent.  

Whisk in flour and cook for 1-2 minutes.

Stir in cheeses, cream and milk

Simmer sauce and stir occasionally so that the cheese doesn’t burn on the bottom of the pan.

Add seasonings. { salt and pepper }

Sauce will be ready once all cheese is melted.

Pour cheese over noodles :)

Dark Chocolate Peanut Butter Brownies


Red Beans and Rice with Fried Eggs


Red Beans and Rice with Fried Egg

2 Tbsp olive oil
1 yellow onion, chopped
3 cloves garlic, minced
1/3 jar of Recaito
1/3 jar of Sofrito
1 can small tomato sauce
2 cans Goya light red kidney beans (not drained)
2 cans Goya dark red kidney beans (drained)
salt, pepper, Adobo, Badia's complete seasoning to taste
4 Eggs
3 C cooked rice ( 1 1/2 C uncooked rice- cook according to pkging)



---------PREPARATION--------


Cook onion, garlic, and seasoning in olive oil until translucent in large skillet.

Add Recaito and Sofrito and cook for 2 minutes. Stir in tomato sauce (if it appears to thick you can fill your empty tomato sauce can with water ad add to skillet)

 Add your beans and cook on low simmer for 25-35 minutes or until your beans are soft. 

Taste and make sure everything is seasoned well. If it needs more seasoning, add some Adobo and pepper.

{Adobo is very salty, and I have made the mistake of adding salt and Adobo- I love salt.. but not that much!}

In another skillet, add your eggs and fry. 

Cook eggs so the yolk will ooze out when on the plate. This adds a lot of flavor to this delish dish. :)

Weekend roundup

This weekend a lot happened. We went to one of our most awesomest friend's wedding, I witnessed Ivan eat a salad (the first in his life- since he despises anything green), and spent a lot of time with friends. Most importantly- I spent most of my weekend with Ivan right by my side. He is leaving right after work Thursday for a boys' trip to Nashville. While I am really excited for him to experience Nashville and hang out with his 2 best friends- I will miss my best friend. We have never really spent a weekend away from each other, so those four days will be tough. Who will I cook for?

Chicken Tacos



I realized I had chicken in the fridge that needed to be cooked off before it went bad. I threw my 3 chicken breasts in the crockpot for 9 minutes with salt, pepper, and basil. Once cooked- I let them cool off and threw them in the fridge.

So what do you make when you have 3 whole seasoned chicken breasts in your fridge?

Chicken Tacos?


Yep!

So easy!

--------------INGREDIENTS-----------------

2-3 Chicken Breasts, seasoned
1 Can Diced Tomatoes
1 Pkg Taco Seasoning
Taco Shells
Shredded Cheese
2 Cloves Garlic
1 Yellow Onion, diced
Avocado
 Sour Cream

---------PREPARATION--------



 All you need to do is cook off the onion and garlic. Add tomatoes and taco seasoning. Once simmering, throw in your chicken and heat until warmed.

Serve over taco shells.

 Top with cheese, Avocado, and Sour Cream.
