French Onion Soup with Black Bean Quinoa Patties





Black Bean Quinoa Burgers

--------------INGREDIENTS-----------------




1 1/2 C Cooked Quinoa (according to pkg)
1 can  black beans, drained and rinsed
1 can corn, drained and rinsed
1 can diced tomatoes
1 onion, peeled and diced
1 Tbsp olive oil
2 cloves garlic, minced
salt, pepper, adobo, parsley


---------PREPARATION--------



Cook  onion and garlic  in oil until translucent.

 Add tomatoes and cook for 5-7 minutes.

Stir in black beans and corn.

Season with salt, pepper and adobo

In a blender, take 1/2 of the quinoa and bean mixture and blend until smooth. Combine the blended quinoa mixture with the rest of the quinoa and black bean mix in a bowl.

Make patties using your hand and place on a baking sheet.

Cook at 350 degrees for 30 minutes

I always order french onion soup if it is a special at a restaurant. I love the cheesy burnt topping and savory beef broth the onions soak in. I made my own for the very first time last night.


French Onion Soup


--------------INGREDIENTS-----------------


3 lb onions, peeled and chopped into slivers
3 Tbsp butter
8-9 C beef broth
Swiss cheese
baguette
1 Tbsp Worchestire sauce
1/2 C dry white wine
1/4 C Flour
salt, pepper, parsley

---------PREPARATION--------


In a large stock pot cook the onions and 1 Tbsp butter until soft and translucent. (About 10 minutes)

 In a saucepan cook remaining butter and flour until simmering. Simmer for 3-5 minutes.

 Add white wine to onions and cook down for 10 minutes

 Add broth to onions, worchestire sauce, seasoning, and flour mixture. Keep on a simmer for 30 minutes

Cut baquette and top with Swiss cheese. Place in oven at 350 degrees until bread becomes hard and the cheese is melted. Broil for 5 minutes

 Serve soup and top with Swiss cheese baguette slices.
