Chicken Cordon Bleu with Garlic Mashed Potatoes



Chicken Cordon Bleu
-------------Ingredients------------
2 Boneless Skinless Chicken Breasts
2 Eggs
1-2 C Panko
1/4 Lb Boars Head Ham
1/4 Lb Boars Head Swiss Cheese
Salt and Pepper
2 Tbsp Olive Oil
-------------Preparation------------
First you are going to preheat the oven to 400 degrees.

 Slice each chicken breast in half lengthwise. Pound each breast to thin each piece out.

Season each side of each breast with Salt and Pepper.

Grab 2 small bowls. In one bowl add the eggs and whisk. In the other bowl add the flower.

Place 1 slice of ham and 1  slice of swiss in the center  and roll each piece of chicken.
(You might want to use a toothpick  on the ends to keep the chicken held together)

Take your filled chicken and dip into the eggs. Then roll the chicken in the panko until fully covered. Repeat for each piece.

Place your chicken on a baking dish and drizzle olive oil on top.

Bake 20-25 minutes or until the breadcrumbs on top have browned.

This meal is perfect with a side of garlic mashed potatoes!
