Hamburgers with Twice Baked Breakfast Potatoes

Twice Baked Breakfast Potatoes

  • 3 Russet Potatoes
  • 6 Eggs (2 per potato)
  • 4 Tbsp Milk
  • 1 Avocado
  • 4 Tbsp Sour Cream
  • 1/2 C Monterey Jack Cheese, shredded
  • Salt and Pepper

Preheat the oven to 400 degrees.

Bake the potatoes for 30 minutes on a baking sheet.

Once soft, slice each potato in half and scoop out the centers (be very careful!!)

Mash up the insides of the potatoes with the milk, avocado, sour cream, cheese, and salt and pepper.

Fill the potatoes with the mashed filling and make a small well for the egg to fit in.

Bake the potatoes for 2-3 minutes or however long you would like, depending on how you enjoy your eggs. If you want your eggs cooked through then leave the potatoes in the oven until the yolks turn a light yellow.
