BBQ Chicken Sandwiches with Avocado Mac and Cheese




Avocado Mac and Cheese
-------------Ingredients------------

Pasta ( 1 box, any kind you prefer)
2 Tbsp Butter
1 Small Onion, diced
2 Garlic Cloves, minced
2 Tbsp Flour
2 C Fat Free Cream
1 C Whole Milk
4 Oz Shredded Sharp Yellow Cheddar
8 Oz Shredded Sharp White Cheddar
4 Oz Monterary Jack Cheese
4 Oz Parmesan
2 Avocados (halved and pitts removed)
Salt and Pepper

In a pan cook onion and garlic in a little bit of butter until translucent. Add seasonings.

Whisk in flour and cook for 1 minute.

Stir in milk and cream for a few minutes.

Add the cheeses and simmer the sauce for 20 minutes or until all cheese is melted.

Taste for flavor, and add more seasonings if you need.
Mash 1 avocado and then add it to the cheese sauce.
Boil water and add the pasta.

Cook the pasta al dente and drain.

Pour cheese sauce over noodles, top with chunks of the remaining avocado and serve


For the barbeque chicken sandwiches all you need to do is cook 3 peices of boneless chicken breasts in either a pressure cooker ( for 10 minutes ) or crock pot ( for 5-6 hours ) with your favorite bbq sauce. One the chicken is cooked, remove from the pot and shred with two forks. You can serve the bbq chicken on a toasted onion bun..
