Copycat Chick Fil A Fried Chicken Sandwiches with Sundried Tomato Mac and Cheese


I don't like eating fast food for many reasons. I do however like to eat fried food, you could fry about anything and I will eat it. I like to take meals that I enjoy either ordering for delivery or at the drive-thru and making them my own. Usually when making fried chicken you have to marinade the chicken in seasoning for 4+ hours before cooking. With this recipe, you don't have to think ahead. When your ready all you have to do is coat the chicken and fry it. This is by far one of my favorite fried chicken recipes (obviously why Chick Fil A is so sucesseful!)




Copycat chick fil a chicken sandwich  
--------------INGREDIENTS----------------
4 skinless, boneless chicken breasts
Salt and Pepper
1 tsp paprika
Peanut oil, for frying (at least 2 inches to cover the bottom of a pan)
1 large egg
½ cup nonfat milk
1 C all-purpose flour
1 Tbsp milk powder
1 Heaping Tbsp confectioners’ sugar
¼ tsp baking soda
¼ tsp dry mustard
4 soft hamburger buns, split
optional: tomatoes, lettuce, mayo, cheese


--------------PREPARATION----------------
Pound each chicken breast to be about ¼ to ½ inch thickness. Season chicken with 1 tsp salt, and ½ tsp each of paprika and pepper. Set chicken aside.

In a heavy bottom pan, heat 2 inches of peanut oil over medium heat until a deep fry thermometer registers 325 degrees.

While the oil is heating, whisk the egg, milk, and 2 Tbsp water in a baking dish.

In a separate bowl whisk the flour, milk powder, confectioners sugar, baking soda, dry mustard, the remaining ½ tsp paprika, and 1 teaspoon each of salt and pepper.

Dip the chicken first in the egg mixture and then dredge in the flour mixture coating completely.

Fry the chicken in the hot oil until brown about 4 minutes, adjusting the heat if needed. Drain on paper towels.

Serve on lightly toasted buns with desired toppings.




sundried tomato mac and cheese
--------------INGREDIENTS----------------

Pasta ( 1 box, any kind you prefer)
2 Tbsp Butter
1 Small Onion, diced
2 Garlic Cloves, minced
2 Tbsp Flour
1 C Whole Milk
1/2 Chicken Broth
5 Oz Shredded Sharp Yellow Cheddar
8 Oz Shredded Sharp White Cheddar
Sundried Tomatoes
Salt and Pepper
  
--------------PREPARATION----------------
In a pan cook onion and garlic in a little bit of butter until translucent. Add seasonings.
Whisk in flour and cook for 1 minute.
Stir in milk and chicken broth for a few minutes.
Add the cheeses and sundried tomatoes.
Simmer the sauce for 20 minutes or until all cheese is melted.
Taste for flavor, and add more seasonings if you need.
Boil water and add the pasta.
Cook the pasta al dente and drain.
Pour cheese sauce over noodles and serve
