Grilled Chicken with Pasta Salad

What for dinner tonight???Grilled Chicken with Pasta Salad! I have been craving pasta salad and I only  ever make it for BBQ's. I decided to make this tonight as our side to grilled chicken. Wow! So simple to make and you can prep everything a day before to make this an easy 20 minute meal the day of. I hope you enjoy this as much as we did!

--------------INGREDIENTS-----------------

2 Boneless Chicken Breasts
Badia Seasoning
Adobo
Salt
Pepper
1 Box Pasta
1 C Cherry Tomatoes, halved
1 Green Apple, chopped
1 C Feta 
1 Cucumber, sliced
1/4 C Sliced almonds
Sun-dried Tomato flavored Salad Dressing
2 Tbsp Olive Oil 

---------PREPARATION--------

This meal needs to be prepped either 1 day in advance or at least 2 hours before serving.

Season you chicken cutlets with salt, pepper, adobo, and badia seasoning until the chicken is fully covered. Set aside in the refrigerator to allow the chicken to absorb the seasonings.

Cook the pasta according to the package and set aside until the pasta is fully cooled off.

Make sure all of your veggies are chopped and place them in a large bowl.

Once your pasta is cooled, add to the veggies. Stir in the cheese,  nuts, and salad dressing. Make sure you season well with salt and pepper. Set aside in the refrigerator so the pasta salad can cool.

The chicken will only take 20 minutes, so when you are getting ready to eat you can pull the chicken out of the fridge. I used a panini grill to cook the chicken since our grill is out of propane. We were REALLY surprised at the final product, the chicken was tender on the inside, yet nice and crisp on the outside. The panini grill worked GREAT and was less messy then a traditional grill. 

Back to the instructions! :)

Place your chicken on your preheated grill and cook for 10 minutes. Open the grill and pour just a dab of olive oil over each cutlet. Cover and continue to cook for another 7-10 minutes and waaalllaaaa ... DONE!

You can now place your chicken on your plates and serve your pasta salad for a light, yet delicious summer meal!
