Super Tuesday

Boneless Fried Chicken and Three Cheese Baked Mac and Cheese


Boneless Fried Chicken
2-3 pieces of boneless chicken breasts
2 eggs, whisked
2 cups bread crumbs
salt and pepper
4 Tbsp olive oil

1. Trim the chicken
2. Top the chicken off with a little salt and pepper on each side and place the chicken in the bowl with the whisked eggs. Cover each breast completely.
3. Remove the chicken from the bowl, and toss them with the bread crumbs on a plate.
4. Heat olive oil in a frying pan until hot.
5. Cook the chicken on both sides until browned all the way through.


Three Cheese Baked Mac and Cheese
1/2 pound elbow macaroni
3 Tbsp butter
3 Tbsp flour
1 Tbsp powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 Bay leaf
1/2 tsp paprika
1 egg
6 ounces sharp yellow cheddar
6 ounces sharp white cheddar
6 ounces gouda
salt and pepper

Topping
3 Tbsp butter
1 c bread crumbs

1. Preheat oven to 250 degrees.
2. In a large pot of boiling salted water, cook the pasta.
3. While the pasta is cooking, in a separate pot melt the butter. Whisk in the flour and mustard and keep it moving for about 5 minutes until there are no lumps left. Stir in the
milk, onion, bay leaf and paprika. Simmer for 10 minutes and remove the bay leaf.
4. Temper in the egg, stir in 3/4 of the cheeses and season with salt and pepper.
5. Fold in the macaroni with the mix and pour in a casserole dish. Top with the remaining cheese.
6. Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes.
7. Let the mac and cheese sit for 5 minutes before serving.

Monday Night Dinner

Tonight, despite the 100 degree weather outside I decided to make a Ginger Butternut Squash Soup and Grilled Cheese. I experimented with a Strawberry-Cucumber Salad because I had both strawberries and cucumbers that needed to be eaten. The salad turned out to be amazing, and without any expectation, a completely delicious meal was made.

Ginger Butternut Squash Soup
1 butternut squash
2 tsp olive oil
2 c sliced onion
1 tbsp brown sugar
2 tsp minced ginger
2 minced garlic cloves
5 c chicken broth
1 tsp parsley

1. Cook oil, onion, ginger, brown sugar, garlic in a skillet until the onions are soft

2. Cook squash, chicken broth, and parsley in a pot until squash is tender.

3. Add squash and onion mix in a blender. Return the mixture to the pot and bring to a boil.
4. Serve

Three Cheese Grilled Cheese
1 loaf of your favorite bakery bread
Provolone Cheese ( 1 piece per sandwich)
Cheddar Cheese ( 1 piece per sandwich)
Cream Cheese ( spread some on one piece of the bread)

1. cook wit a little butter, flipping when browned

Strawberry Cucumber Salad
2 Cucumbers, halved and sliced
10 Strawberries, sliced
1 tsp soy sauce
2 Tbsp Apple Cider Vinegar
2 Tbsp Brown Sugar
1 tsp salt



1. Mix together
2. Place in the fridge until you are ready to serve. The salad is better after it sits for at least 10 minutes

Grilling out

There are some nights where we decide to grill out, eat at home, and begin our night afterwards. Tonight we did just that, and I have to say we made some of the best burgers yet.


Cheese Burgers with a fried egg
1 pound 73% lean beef
1/2 minced onion
1 mined garlic clove
s&p
4 pieces swiss cheese
2 eggs

After the 2 burger patties we made cooked on the grill we placed 2 pieces of swiss cheese pieces on each, meanwhile I fried 2 eggs on the stove. We placed the cheese burgers on onion buns and top them off each with 1 egg. A little ketchup, mustard, and mayo and we were good to go!

Pasta Salad
Fusilli pasta, 1 box
2 tomatoes, cubed
1 cucumber, sliced
2 green apples, cubed
1/2 container of Italian dressing
1/2 cup parmesan cheese

Cook ahead of time, place in fridge and when the burgers are about to be plated, you can serve the pasta salad. It's fresh, simple, and delicious!
