Carrot Squash Soup with 3 Cheese and Tomato Grilled Cheese


--------------INGREDIENTS----------------- 

  • 2 Tbsp olive oil
  • 2 onions, peeled and chopped
  • 6 cups chicken broth
  • 2 pounds carrots, peeled and sliced
  • 1 medium sized acorn squash, peeled and chopped
  • 1/2 red pepper
  • 2 Tbsp fresh ginger or ginger spice
  • 1 cup cream
  • Salt and pepper
  • 2 Tbsp parsley and basil

---------PREPARATION--------


In a 6-quart pan, over medium high heat, add olive oil and onion and cook, stirring often, until onions are limp

Add broth, carrots,squash, red pepper and ginger.

Cover and bring to a boil

Reduce heat and simmer until carrots are tender when pierced

Add seasoning and cream.

Remove from heat and use immersion blender until smooth

For the grilled cheese all you need is yellow cheddar, white cheddar, mozzarella,  1 tomato and bread.  Place cheese and tomato between 2 slices of bread. Put some butter in a warm skillet and cook until browned on both sides
