These sandwiches taste sinful, they are that good! The melted cheese, BBQ chicken, and avocado just melt in your mouth. I am getting hungry just thinking about these sandwiches.:)
BBQ Chicken grilled cheese
--------------INGREDIENTS------------
½ red onion, thinly sliced
1 Lb chicken breast
1/2 cup barbecue sauce
8 Slices mozzarella cheese
8 Slices cheddar cheese
1 small avocado, sliced
Fresh cilantro leaves
Bread of your choice
Butter
Mayo
---------PREPARATION--------
Place the chicken, onions, and bbq sauce in a pressure cooker. Cook on high for 8-9 minutes. Once the chicken is fully cooked, shred each breast with 2 forks and set aside.
Grab 2 slices of bread and add a touch of mayo to each one. Add the cheese to one slice (I used 4 slices per sandwich) and top off with the shredded chicken and avocado. Top off with the remaining slice and add the sandwich to a heated skillet with butter.
Repeat.
