Pompei, Italy

Our next stop in Italy was Pompei. on May 17th we got on the bus and headed to the old town of Pompei to check out the beautiful ruins. Aldo, our tour guide which made the tour that much more fun!

 
 Our tour guide, Aldo ( you will see more of him in my pictures) was amazing. He was this charismatic man who was really knowledgeable and extremely funny. We were so lucky to have him as our guide for multiple tours. Thanks Aldo!

Sorrento, Italy

The day after graduation Ivan and I headed out of town for our Italy vacation. We left the very next day and drove to Raleigh where we celebrated Mother's Day with my mom. On Tuesday, May 14th we left for the airport ready for a very long day of travelling.

We got to RDU a couple of hours early to check in and get our boarding passes, only to find out that there was a discrepancy with Priceline and Lufthansa and our flights from Toronto to Frankfurt and Frankfurt to Naples had been cancelled. I contacted Priceline and Lufthansa to get answers, only to be told by both companies that I needed to contact the other. Finally, on a three way call with both Priceline and Lufthansa and with only a half hour to spare until boarding, we had come up with a solution. We re-routed our checked baggage to Naples and were given a confirmation on two new flights.

Our flights went smoothly, and even though Ivan and I couldn't sit together on the longest leg- we were really happy when we finally arrived in Naples the next day (May 15th) at 4:00 p.m. especially because our original itinerary had us arriving at 11:00pm.

Maria and Jose, Ivan's parents picked us up at the airport and took us out for pizza. The pizza was divine, and I was so excited to finally have authentic Italian pizza for the very first time. Over lunch we discussed a little bit of our itinerary, but I knew that Maria would have everything planned perfectly and I was happy to just go with the flow.

 We stayed in Naples that night and we woke up early the next morning to catch the bus for Sorrento. We took the Alibus which took us through the Amalfi Coast. Once we got to Sorrento, the four of us spent the day shopping, eating, and drinking …

My College Graduation!!


On Saturday, May 11th I finally got the graduation I have been waiting for. While my college experience was not "typical" and I spent many years following my own path, I was finally able to say... "I did it!!" Besides wanting my family (boyfriend included) there, I really wanted all of my friends to share the experience with me. I decided to throw myself a party. I invited all my friends and the family that could make it. My grandparents came into town a few days early and stayed with us, and my Mom,Paul, and siblings followed shortly after. By Friday night we were all in my kitchen preparing for the party. Ivan, Paul, and Grandpa were busy putting outdoor lights up, setting up the tables, and planting flowers while my sister; Kelly, Mom, and Grandma and I got all of the food together. Once Saturday morning came, we all gathered to the college campus for my graduation. The ceremony lasted a few hours and we lucked out on really nice weather.  The college's president made a few speeches, followed by a few others. Once the speeches were finished, they began calling out the majors for diplomas to be handed out. Being an accounting major, we were first to cords the stage.  Once the diplomas were all handed out, the ceremony was over...we walked down the schools cistern out through the arc to various types of music. The song that played as we walked out of the ceremony was YMCA- which couldn't have made me happier as I have a very long history with the YMCA ( from after school programs to summer camps and being a counselor, the Y has had a major impact on my life.)

Once I found my family, we took pictures and headed to a quick lunch as I needed to finish setting up for the party.

-------------------Falafel Ingredients------------------
4 cups stemmed and torn collard greens (one bunch), or spinach
1 can chickpeas, rinsed and drained
3 medium to large cloves garlic, chopped
1.5 Tbsp tahini
1.5 Tbsp fresh lemon juice
¼ tsp cumin
sea salt and black pepper
3-4 Tbsp oat flour (ground from gluten free oats)
~ 4 Tbsp olive oil for cooking


-------------------Falafel Preparation----------------
Add collard greens, chickpeas, garlic, tahini, lemon juice, cumin, and a healthy pinch each salt and pepper to a food processor and mix to combine.
Once well incorporated, transfer to a mixing bowl and stir in oat flour 1 Tbsp at a time until the mixture is thick enough to handle – about 3-4 Tbsp.
Taste and adjust seasonings as needed. I added more salt, pepper and lemon juice, and a touch more tahini.
Heat a large skillet over medium to medium-high heat and add 2 Tbsp oil at a time. Swirl to coat pan.
Add 4 falafels (or however many will fit very comfortably) to the pan at a time.
Check at the 1-2 minute mark to ensure they’re not browning too quickly. If they are, slightly reduce heat. Flip once deep golden brown – about 3-4 minutes.
Cook until the underside is golden brown as well.

-----------------------Tzatziki Ingredients------------------
3 tbsp. olive oil
1 tbsp. vinegar
2 cloves garlic, minced finely
1/2 tsp. salt
1/4 tsp. white pepper
1 cup greek yogurt, strained
1 cup sour cream
2 cucumbers, peeled, seeded and diced
1 tsp. chopped fresh dill


-----------------------Tzatziki Preparation------------------
Combine olive oil, vinegar, garlic, salt, and pepper in a bowl. Mix until well combined. Using a whisk, blend the yogurt with the sour cream. Add the olive oil mixture to the yogurt mixture and mix well. Finally, add the cucumber and chopped fresh dill. Chill for at least two hours before serving.

Couscous with Kalamata Olives, Pine Nuts, and Feta Cheese:

-----------------------Couscous Ingredients------------------

1 cup of vegetable broth or chicken broth
1 cup of whole wheat couscous
1 tsp olive oil
2 tbsp red onion, diced
1 clove of garlic, minced
2-3 tbsp pine nuts
5-6 grape tomatoes, diced
10-12 kalamata olives, sliced
2 tbsp fresh parsley, chopped
3 tbsp feta cheese
Sea salt and freshly cracked pepper, to taste

-----------------------Couscous Preparation------------------

Heat the olive oil in a small skillet over medium heat. Add the onion once it’s hot. Sauté for 2 minutes then add the pine nuts. Cook for an additional 2 minutes then add the minced garlic; stir constantly for 1 minute then remove from heat.

Cook the couscous in the vegetable or chicken broth per instructions. Once the couscous is light and fluffy add the onion, pine nuts, and garlic mixture as well as the tomatoes, parsley, kalamata olives, and feta cheese. Season with sea salt and freshly cracked pepper, to taste. Serve immediately. Enjoy.
